when running the update tool we get this error and have been unable to locate a solution / understand the full problem - can anyone adivse?

Seems you have some wrong CentOS / Debian configuration leftovers!
Try in the SSH console:
plesk repair installation

Or maybe try this:
 
System package update-notifier-common post-install script failed due to a Python module absence. Try running:

sudo apt-get --reinstall install python3-debian

Alternatively, you may try removing update-notifier-common and packages that depend on it, if you don't need them (be careful, though).
