Is there a way to change which client a domain is assigned to after it already been created?

Yes. You should change the according record in "domains" table in MySQL PSA database.
"cl_id" field points to the record in "clients" database.
 
Beginning from Plesk 7.5.4 for Windows You can use command line interface "domain.exe" to do it
