The default version of my plesk is at 5.4, and I wanted to use version 7.4, how can I make it the default?

When I run php -v on SSH it gives version 5.4 I intend to change it to 7.4.

It will not affect your customers. It just a replacement OS vendor PHP version with the latest Plesk PHP version.
As a possible alternative, you can upgrade OS vendor's PHP version (/usr/bin/php). It is Linux administrative task not related to Plesk.
