On Plesk for Linux mod_status is disabled on upgrades to improve Apache security. This is a one-time operation that occurs during an upgrade. You can manually enable mod_status later if needed.
To my understanding you can change (or add) a selector instead of the Plesk 'default' and also add that selector as file name near 'default' file_name which contains the private.key, on the Plesk server.
What I'm not sure about is, would postfix fetch not only the 'default' selector key when generating emails and signing them?
