Good morning

If I set up a debian 11 machine with plesk, configure it and make it a clone and then put another hostname and other webs, shouldn't I have problems?
 
You'll at least have problems with the different IP address/network interface. Maybe you should follow this official guide that describes how to clone Plesk installations to make deployment of new servers easier:
