Is there any way to disable the file manager access to customers in the web host plesk edition?
 
Currently, it is not possible to disable/hide File Manager. Such functionality is yet to be implemented in Plesk.

Vote for this feature on Plesk UserVoice portal . The top-ranked suggestions are likely to be included in the next versions of Plesk.
