For some reason my DNS in Windows is being reverted. I'll add a TXT SPF DNS file to my domain and then 2 days later it's gone. Does Plesk keep doing this? Does it not like me to edit DNS directly from the MS DNS console?

It probably runs scheduled tasks that repopulates your DNS with information from the PSA database.
