Question for domain name using wordpress contact form, PHP default email sender

For a domain in plesk, the System user for that domain is: XYZ123

and on that domain, I have wordpress installed and have a contact form.
by default, when the WP contact form is filled out and an email is sent (from the server on this domain)...
it is from: XYZ123@domain .com

Note: I've used different contact form plugins, etc. all do different things, features, etc. and I can set the from and to addresses, but ALWAYS at the server level and when PHP is sending the email ... it uses XYZ123@domain .com

IS there a way around that?
Can I change that default sender?
