how can I change the default access_log filename and/or access_log location?

Is it possible to rename the Apache access log of each site from access_log to something else? Is it also possible to get Apache to save the log file somewhere else other than domain.com/statistics/logs? I can probably do these via vhost.conf files on a per site basis but I'd like to be able to do this for all sites by default without having to create vhost.conf files for each one.
 
Could you please clarify what is the reason of such desire? Not sure that it is possible. I think that it is hardcoded.
