Issue ibdata1 taking over 8GB

Is there any easy way on Plesk to lower the size of ibdata1?

How to shrink/purge ibdata1 file in MySQL

Also I'm wondering what kind of impact this could have on the Plesk databases that are currently managed.

Just modify your my.cnf as you wish. Plesk does not overwrite it.
