Issue Legacy version to restore my server

In a nutshell, my server died last sunday and all I have is a 3 weeks old backup.

I had Centos 7.9, Plesk 18.0.53.2 and Mariadb 5.5.68.

I do need to have the same Plesk and Maria version to restore the server right? And then I could update it to the newest version? I bought a server on OVH but obviously after the fresh install it will have the new version. Which OS should I install to do this the safest way?

Should be restorable with a current version.
After all, the recommended way to upgrade the OS and Plesk is to migrate/restore, so it has to be able to process older backups.

It won't have problems changing the mariadb version? I tried to restore just one of the websites from a client that had a wordpress dump and the database threw tons of errors in a hosting plan I bought to do some tests and it didn't work in the end. Threw lots of expected \ or ; or " and obviously PHPMyAdmin never agrees to add rows with syntax error. Date can't be 00-00-00 00:00 and few more things.
 
Not talked about the same backup. OVH is taking much more than expected to deliver the new server. I have the complete backup and a client had just the backup of his files + database.
We tried to restore those files + db to a cloud hosting but didn't work. That's why I was worried that it was a version problem and that I had to install the same versions of both Plesk and Mariadb.
I'm just working on my theories and preparing myself for the first second I have the server in my hands. Thanks for your time @mow.
 
There shouldn't be an issue restoring a backup generated on a server running Plesk 18.0.53.2. As for MariaDB, although it is not strictly necessary to run the same database server versions, you might encounter compatibility issues. If you could provide the errors you are encountering during the restoration, we will do our best to address the issue.
