Migrating from an old mail system

We've just setup our first Plesk hosting server. We have a bunch of users currently on an old POP3 server (Merak) that we'd like to migrate to the new Plesk server.

What is the least painful way to accomplish this?

Here's my thoughts:
- Notify the users that their POP3 server is going to change at a certain time.
- At the appointed time, cut over the DNS so that new mail is delivered to the Plesk server..
- Users download their mail from the old POP3 server and then change their client settings to point to the new POP3 server.

Is there an easier way to do this that doesn't involve the user's having to change their settings (aside from password)?
