I have a live site on another server, but I'm planning on replacing it with a different site on a VPS running plesk. Is it possible for me to set the site up in plesk using the domain name for the live site, but still be able to access the site through perhaps a subdomain of the server's URL?

To clarify, if the site I'm working on is and is going to be mysite.com, and the server that Plesk is on is at myserver.hostingprovider.com, is there an easy way to access the site in progress using the second URL somehow?
 
Yes, that is possible - you could add the sub domain as a domain alias, or you could setup the site as the subdomain and then add the main domain as the domain alias

Additionally you could just edit your host file to point there, or create a new zone file entry for newsite.domain.com to point to the new server while @none and www point to the old one.
