I have noticed that nginx caching suddenly stops working after several hours.
When cache is running the TTFB is at 30-50ms, and when it's not running it's at 1000-3000ms - Byte Check - TTFB Results
Sometimes the problem goes away when I reboot the server and re-enable nginx caching, but it doesn't seem to do the trick this time.
Server details:

Server details:
- I am running a WordPress site installed by WordPress Toolkit.
- The server is Ubuntu 18 running with 1gb of RAM on Vultr.com VPS
- I installed the server last week
- I have not modified apache or nginx configuration. Everything is set to defaults.
- Ran all the updates
- Only running 1 account / domain
