php and cgi not work

i have VPS server with 1and1, using plesk latest version, default installation.
I have Joomla site installed, with directory permissions set at 755, but Joomla see the directories as unwritable. They are writable with 777 settings. This may be unacceptable, so settings returned to 755.
Joomla site functions (still unwritable) with domain settings using php run as apache module.
When changed to php run as cgi or fast cgi (possibly resolve the permissions issues) the site does not work and i get the apache error page.
1and1 say to just live with the 777 permissions and cannot offer help with the cgi problems.

Anybody got a handle on this? Do i have to reboot or reset apache after changing the php run as cgi?
