Do mailboxes consume storage from the allocated subscription or do they consume space from the server's global storage?

Emails in a mailbox consume storage from a subscriptions allocated disk quota, you can set a subscriptions disk quota and maximum mailbox size in the 'Resources' tab of the applicable 'Service Plan'.
