I am currently running plesk 11.5 for Linux and am considering upgrading to 12.

Can I do this without having to upgrade my current versions on SQL 5.1.73 and php 5.3.3?
 
Maybe --disable-plesk-sys-updates option of autoinstaller will help you, but I'm not sure. You can try at least.

with Parallels Panel and other products
 
When I look at the Plesk online demos (although broken at the moment) they are still using SQL 5.1.73 and PHP 5.3.3 so it must be possible.
