I get this mail today. In plesk obsidian and browser it says "Valid To January 8, 2021".

It was already renewed 10.10.2020.
The following domains of ..... have been secured with Let`s Encrypt certificates:

So why I get this mail with expire in 20 days? Is this maybe a bug in letsencrypt.org or is something going wrong here?

It could be a different certificate that you get the Let's Encrypt message for. You might have created one, then made a change to the setup of the domains and created another one a bit later. The first one will then expire while the other one is still intact.
