Question Alternative to Roundcube - Current Server PHP 8.4

I have a website on git and it requires 8.4php but roundcube is still on 8.3 is their another mail service or is their not?

Webmail runs separately from your site. As long as you set the PHP version for your site then it'll utilize that specific PHP version for the site.

The client composer is using 8.4+ and her whole site in built on 8.4 - roundcube wont run 8.3, the composer needs 8.4 in the plesk main settings.

Unless your client runs a separate Roundcube installation on his/her domain, independent of the default Roundcube component used by Plesk, it should not matter. However, as long as PHP 8.3 is installed, the Roundcube component from Plesk will run regardless of the PHP version used for the domain of your customer. Because the Roundcube component from Plesk runs independently from any domain PHP settings/configuration.

If that's not the case for you, provide more details so forum users can make suggestions for troubleshooting any issue you might have.

That's why then I created the account from the plesk root thinking i could keep a better eye on it.
