Best supported Mail Server / Clients with admin rights

Hello,

I have horde and mailenable installed as default on my server with no other options installed.

I need a mail server which allows me to set up an admin mail account on my domain which saves a copy of all incoming/outgoing mail on the server to the admin account.

I have this ability with DeskNow! but want to know if any of the supported mail servers under Plesk offer the similar settings?
