how can I change an already existing user to another already existing role?
For example: from Administrator to Application User.

You can do it via Subscriptions > example.com > Users > User Accounts > John Doe > Change Settings
However, the initial user's role cannot be changed.
 
Hi, @johnrdorazio . You can assign a new role to a user from Users > example_user > Change Settings > User role . If you are referring to the possibility of assigning the role to set of users after its immediate creation, that's not yet implemented in Plesk. I would like to encourage you to submit the request at features.plesk.com.
