You can add the PHP repo of DEB.SURY.ORG (see https://packages.sury.org/php/README.txt for instructions) to add PHP 5.6, ... 8.1 to your server.
After installing you simply add them as custom PHP versions to plesk. (there is a CLI command for that)
We use this on many of our Debian 9, Debian 10 and now also Debian 11 servers without any issues.
We use "7.3.x" for displayname, because this name does not get updated in Plesk, whenever there is a new minor version out you may (automatically) install via apt update.
So it would for example still show 7.3.33, though in reality you have 7.3.34 installed.....sure, does not hurt anyone, but could cause confusions
