e-mail setup question

I have a plesk server i am managing. I have an unusual setup. The webserver is running plesk in one location..however the mail server is on another machine in another city. How do i route outgoing e-mail sent from the fp extensions to the external mailserver?
 
I have searched the manual. Basically I need smarthosting. I need the mailserver in plesk to forward all of it's mail to my exchange server. I just need to tell plesk that the website's mail goes to that machine(only for one domain not all of them).

Could you expand a bit more on how to do this as i have my e-mail hosted on my provider (one and one) and want to be able set up horde webmail to access them.
