How can I count the emails marked as spam in the whole server every day?

I'm using spamassasin with some rules,
and do training in many domains.

Lately i added some MAPS addresses like spamcop to make the things better.

My question is ...how can I count how many emails are blocked, or marked as spam each day ? , i want to make a shell script so I can check if my spam is reduced or increased?
I looked at the log : /usr/local/psa/var/log/maillog but i cant say that its clear to me what is spam and what is not.

and another question...
If the server finds some address that is inside tha MAPS lists, will it mark it as spam and push it to the mailbox? or it will never reach the mailbox & spamassasin ?
