Issue I get spam report mail instead of moving to the spam folder

You might be right. My only goal was actually to get rid of INBOX prefix and get german folder names (as Outlook still creates the english ones). It was never about "separator". But then the issue with the spam folder arrived. My feeling is that plesk is just using some hardcoded INBOX.Spam for moving the mails instead of searching for the "special_use = \Junk" folder.

Who is moving this emails? Plesk, Dovecot or Roundcube? Cause to me it sounds a bit strange, that I have to adjust this roundcube config php file. It's possible to save this folder directly in the roundcube panel.

You're right. I got confused with the symptoms you're describing.

Do you use the Plesk Email Security extension?
