Installing Plesk on a single site server

We're thinking about putting Plesk for Windows on a single site, dedicated server to handle Web+FTP stuff only. Mail runs through a different server, and outside of the web administration and webstats stuff, there's really no need for any other Plesk features.

Is it possible to install a stripped down version of Plesk with the bare minimum of functionality, leaving off mail and stuff completely? How would you recommend doing something like this?
 
Why do you want Plesk if you're managing a single site?
 
Well, can you think of an easier way to let people manage FTP accounts, subdomains and webstats on a Windows box?
 
think if you just set your dns template to use another mail server, for mail.<domain>.com it will
