Some components aren't installed, is this because you have to pay for them? I wanted to install SiteBuilder and Sitebuilder module for Plesk & SiteBuilder publishing support for Plesk, will I have to pay for this or will it just install? And is this actually the SiteBuilder App?

Sitebuilder is separate SWsoft product and this is not an Plesk application. If you wish you can install it. It can be done with help of Plesk autoinstaller or manually on the server. Sitebuilder requires different license key, so you need to purchase it. So first of all I can suggest you to get more information about Sitebuilder, try it, for example, on SWsoft DEMO site and then install it and purchase. Ok through the updater I installed SiteBuilder and Sitebuilder module for Plesk & SiteBuilder publishing support for Plesk, does this mean SiteBuilder is now installed?

Also I installed (through the updater) Ruby on Rails Support, does this install Ruby onto my server?
