i don't know if someone posted this error before, actually i can't find something simliar.
In the micro update 12.5.30 MU#29 there was a change of phpMyAdmin.

Today i want to change a backend password from a customer of us, the problem was that the only reaction i get was a error 500.

In the panel.log i found these error:
PHP Fatal error: Class 'PMA_Util' not found in /opt/psa/admin/htdocs/domains/databases/phpMyAdmin/libraries/insert_edit.lib.php on line 2319

After a short time i found the bug in phpMyAdmin:

Maybe you can fix this with the next micro update. For know i edit the file, so i can change the password.
But i dont want to do this on all of my servers.
 
As far as I know phpMyAdmin 4.6.1 where this bug has been fixed is not released yet.
We will update phpMyAdmin for Plesk as soon as this version with bugfix will be released.
Now you can use mentioned patch as possible workaround.
