secondary email server / relay?

I'm migrating servers and would like to make the current server an email relay for the new one. That way, any email that happened to make it to the old server would automatically be forwarded to the new one. A quick google search only finds bugs and exploits, etc. I can't seem to find out how to relay on purpose.
