The default PHP version specified for webmail use (Roundcube in this caser) is out of date/out if synch with the rest of Plesk Obsidian
PRODUCT, VERSION, OPERATING SYSTEM, ARCHITECTURE
Plesk Obsidian 18.0.36 / Plesk Roundcube 1.4.11-v.ubuntu.20.04+p18.0.36.0+t210526.1459 / Postfix 3.4.13-0ubuntu1
PROBLEM DESCRIPTION
The issue and it's follow ups are all clear to read here:
This Plesk article which is linked from the above also has a supporting post added to it:
This was back when Plesk Obsidian 18.0.35 was the current release. It's such a small change for Plesk to apply, that it was fair to assume that it would have been corrected in the Plesk Obsidian 18.0.36 release, but it's been missed...
STEPS TO REPRODUCE
Try to remove PHP 7.3.* from a server when nothing else from Plesk and no additional packages actually use that package. There will be an error prompt due to the Plesk Webmail specification that's still stuck on specifying PHP 7.3.*
ACTUAL RESULT
Those are described in the links in the problem description section above but realistically, PHP 7.3.* must still remain installed at present.
EXPECTED RESULT
Removal of PHP 7.3.* with no restriction due to a previous coding ommision
ANY ADDITIONAL INFORMATION
Technically, it's not a bug, but it's something that's been missed and thus causes unecessary retention of an out of date package. It could and should be included on the next Plesk minor upgrade. That would be a suitable resolution.

Resolved - Roundcube 1.4.11 run on Obsidian 18.0.35 still defaults to PHP 7.3.* not PHP 7.4.* - Why?
By default, when running Plesk-Roundcube 1.4.11 on Obsidian 18.0.35 it still defaults to PHP 7.3.27, yet, Plesk itself was upgraded from PHP 7.3.27 to PHP 7.4.16, as part of the upgrade from Obsidian 18.034 > Obsisidan 18.0.35... Officially, only Roundcube 1.5.* onwards will run on PHP 7.8.* so...
