What is causing this?... Just happened since I modified collectd.conf to include "Interval 600" setting per KB.

Your apache is dieing so oftenly. Are you under a dos-attack during that time? you need to check the webserver logs for a better understanding of the problem.
 
I'm having similar issues as well

Since my update to Plesk 11.0.9, I've noticed similar waves of yo-yo activity for Apache and nginx. The occurrences happen almost exclusively at night. Perhaps it's not a coincidence; but the evenings where the automated backups are being run seen to also be those evenings when the crashes are occurring. Is it a possibly due to some kind of resource battle??
 
The seems to be a strong correlation to the web services restarts and the backups

I was running automated backups on the morning of December 31st. The Watchdog report for that morning shows:

This is a dedicated server with 4GB of physical RAM. Could the extra resources needed by the backups strain the server sufficiently to crash Apache so often? Running CentOS 5.8 and Plesk 11.0.9
