How do I change the notification sender name?

How can I change the notification sender name? (not sender mail ID).

I'm not sure I understand what you mean. Please can you be more specific?

the PLESK server sending a notification about the client/domain creation, and a notification about the domains, which are exceeding limits.

the mail been send with a name
<sender name> then the mail id is a [email protected]

how/where do I change these two options?

It should be sending the emails to the server's admin for that box. Have you set an email address in the Server -> Administrator section?

yes, but it does not use the name from there.
