Way to change default categories and images in Image Gallery module?

When a user creates a site in Sitebuilder, and they use the image gallery, currently there are default categories and images in place. The categories are called "Category1" and "Category2" and there are three default images (dog, some fruit, and some trees). Is there a way to change these default categories in the database or code so that I can make my own default categories or images that users will see when they create a site?
